DM&A is proud to have one of its own members of ‘Chef Family’ inducted into the Culinary Hall of Fame. Chef Joe Eidem received the highest honor bestowed by the American Academy of Chefs (AAC) for dedicating his life’s work to food and service.
Chef Joe Eidem has been actively involved with the American Culinary Federation for over 30 years. During his career, Chef Joe has owned an Italian restaurant and has hosted a local television cooking show. Chef Joe has specialized in kosher cooking and has had the honor to cater many Bar and Bat Mitzvahs at Reno’s local synagogue. He served as the Foodservice Director at Renown Regional Medical Center, a large medical center in Nevada. While there, he implemented the Destination 10 process and received hospital-wide recognition for creating a department that embraced changes to quality and customer service.
In an interim capacity for DM&A, Chef Joe served as Interim Executive Chef at the Jewish Home in San Francisco with a full kosher kitchen. Chef Joe loves sharing his knowledge of ethnic cooking and traditions. He was also Interim Director and Executive Chef at Cedar Sinai Park in Portland, Oregon. After serving in an interim role at Arrowhead Regional Medical Center, Chef Joe assumed the full-time role of Nutrition Services Manager and Executive Chef in 2018.
Wherever Chef Joe works he is always held in the highest regard because no one loves food service more than he does. His enthusiasm is contagious. His passion and dedication to the culinary profession are unsurpassed. For over a decade, DM&A has had the pleasure and privilege of working alongside Chef Joe. Congratulations to Chef Joe!
